What a treat! As I walked in the door last night, tired but so fulfilled and excited after my first weekend of Yoga Teacher Training with Kery Helmer, the kids announced that not only had they made another video, they had also edited it PLUS there were leftover vegan waffles for me. Talk about an amazing surprise!

My husband has been making this recipe for years. He was originally inspired by Hannah Kirshner’s recipe on the Food 52 blog, but has since made it his own.

It’s always such a treat on Sunday mornings, when the kids have convinced him that it is in fact a Waffle Weekend again, to sit down and enjoy this tasty meal. Hope you’ll like it as much as we do!

Vegan Waffles

A Sunday morning favorite for the whole family. These vegan waffles are sure to get everyone in great spirits.

  • Start by melting the coconut oil and then set it aside to let it cool.
    3 tbsp Coconut Oil
  • Combine all the dry ingredients in Stand Mixer bowl.
    1 cup Flour, 1 tbsp Sugar, 1 tsp Baking Powder, 1/2 tsp Salt
  • Now, combine the silken tofu and the water in your high power blender. (We absolutely love our Vitamix and use it multiple times a day). Blend until smooth.
    14 oz Silken Tofu, 1/2 cup Water
  • Add the coconut oil, lemon juice and vanilla to the blender. Blend on high for a couple of seconds until well combined.
    3 tbsp Coconut Oil, 2 tbsp Lemon Juice, 2 tsp Vanilla
  • Add the wet ingredients to the dry ingredients and mix until well combined with your Stand Mixer on low/medium speed.
  • Cook the batter in the waffle iron until indicator turns green. Take a peek and make sure that the waffles are golden brown. It might need a little more time. Well worth the wait!
  • Enjoy your waffles with your favorite berries and some maple syrup. Huge hit in our family! Hope it will be in yours as well!
