Vegan Vitamix Recipes

We absolutely love our Vitamix and all the vegan recipes that we can make so easily! We use it multiple times a day. In the mornings we make delicious, yet healthy, vegan milk with everything from cashews to oats and coconut. We also use our Vitamix to make açai bowls, easy and nutritious meals for anytime of day.

The kids love to bring smoothies to school, their favorite is our cashew, date, banana and cacao blend. We also like to add spinach and sometimes even some beets to this. Check out one of our favorite vegan Vitamix recipes under!

In the evenings we love using the Vitamix for soups, sauces and it also makes a delicious hot chocolate. Not to mention our kids’ favorite – Vegan Waffles! No end to the possibilities!

Vitamix – the best blender for vegans?

Here’s a link to the Vitamix that we have and adore. It was one of our first and most treasured purchases we made right after we transitioned to a plant-based way of life. It might seem like quite the investment at first, but when we take into consideration just how much we have saved by no longer having to deal with constant doctor’s visits for asthma, stomach issues, ear infections and seasonal allergies and disease etc., it seems like an easy decision.

Vegan Waffles

A Sunday morning favorite for the whole family. These vegan waffles are sure to get everyone in great spirits.

Ingredients

Instructions

  • Start by melting the coconut oil and then set it aside to let it cool.
    3 tbsp Coconut Oil
  • Combine all the dry ingredients in Stand Mixer bowl.
    1 cup Flour, 1 tbsp Sugar, 1 tsp Baking Powder, 1/2 tsp Salt
  • Now, combine the silken tofu and the water in your high power blender. (We absolutely love our Vitamix and use it multiple times a day). Blend until smooth.
    14 oz Silken Tofu, 1/2 cup Water
  • Add the coconut oil, lemon juice and vanilla to the blender. Blend on high for a couple of seconds until well combined.
    3 tbsp Coconut Oil, 2 tbsp Lemon Juice, 2 tsp Vanilla
  • Add the wet ingredients to the dry ingredients and mix until well combined with your Stand Mixer on low/medium speed.
  • Cook the batter in the waffle iron until indicator turns green. Take a peek and make sure that the waffles are golden brown. It might need a little more time. Well worth the wait!
  • Enjoy your waffles with your favorite berries and some maple syrup. Huge hit in our family! Hope it will be in yours as well!
